Our Team

Ben Walter

Ben Walter is a chef, creative director, and one of the founders behind Priory; where he explores the intersection of hospitality, fermentation, and community through food and drink. His cooking draws from Texas ingredients, Japanese technique and sensibility, whole-animal cookery, and the belief that the table is one of the most meaningful places people can gather. After years spent building kitchens, developing restaurant concepts, and collaborating with breweries, Ben founded Priory to create a different kind of hospitality; one rooted in patience, craftsmanship, and a slower way of living. Whether designing a tasting menu, brewing a collaborative beer, or serving a simple meal, his work is guided by the conviction that great hospitality can nourish both guests and the people who make it.
