No. Priory isn't a brewery—it's a hospitality company built around beer, food, and gathering. We collaborate with some of our favorite breweries to create original beers and experiences, then build meals, events, and stories around them. Beer is one of our primary ingredients, even when it isn't in the food.

We don't operate our own brewhouse. Instead, we work alongside breweries we admire, contributing to recipe development, ingredient selection, brewing, and the creative direction behind each collaboration. Every beer is a true partnership rather than simply a private label.

A beer dinner is a multi-course meal where every dish is intentionally paired with a specific beer. At Priory, the beer isn't an afterthought—it shapes the entire experience. Sometimes the food is inspired by the beer. Sometimes the beer is brewed specifically for the menu. Throughout the evening we share the stories behind both, making each dinner feel more like gathering around a table than attending a formal tasting.

Our tasting menu is a series of small courses that tell a seasonal story. Rather than choosing individual entrées, you trust us to guide you through the meal. Each course builds on the last, highlighting ingredients, fermentation, and thoughtful beer pairings. We simply call it The Table because we believe sharing a table is as important as what's served on it.

Fermentation has shaped human civilization for thousands of years. It gave us bread, beer, cheese, soy sauce, vinegar, charcuterie, pickles, and countless other foods that bring people together.
To be a shepherd is to care for something patiently rather than control it. That's how we think about our work. We guide living processes, honor tradition, and create the conditions for good things to develop over time. Whether it's beer, sourdough, miso, or relationships around a table, we believe the best things can't be rushed.
